Purple Sweet Potato is naturally rich in antioxidants, which is shown by the beautiful, rich purple pigment it is prized for. This pigment is created by the Anthocyanidins which are antioxidants, and the root powder is also a great source of soluble and insoluble fibre.
Anthocyanidins are usually responsible for a spectrum of naturally occurring colours in plants and their fruit. The pH balance will result in changes in the colour spectrum, from blues and purples, to pinks and reds and more. If cooking with natural ingredients, you may notice changes in colour, depending on how alkaline or acid your ingredients are.
