Gluten Free Lactation Cookies
My friend has just given birth to twin baby boys and I was looking around for a lactation cookie recipe for her that was gluten free, oat free, and not too high in sugar, and I just could not find one I was satisfied with. I decided to create my own, loaded with healthy fats, including Omega 3 Fatty Acids from the Chia and Flax, plenty of milk boosting herbs and spices, or Galactagogues, and some dark molasses to help provide dietary iron.
The end result was a slightly lumpy cookie, that smells amazing, and tastes even better! They freeze really well, so I have popped them in the freezer until I can drop them off with some Mother's Milk herbal tea, to the proud and very tired new mummy.
